Skubaniec z owocami – ‘Nibbler’ with fruits

In 80’s of last century this cake was baked almost by each family in Poland especially in summer or autumn when the fresh fruits are in abundance.

You can find different and not necessary beautiful and appetizing names for this cake like skubaniec (‘nibbler’ from to nibble into small pieces), szarpaniec (‘tearer’ from to tear into small pieces) or pleśniak (‘mucor’, from the egg white foam). Hmm… it is my joyful word-formation in English. Any recommendations for the English name will be highly appreciated. No one in Poland, however, was worried about the name. Well, perhaps a few purists. It was and is important that the cake tasted and taste really good. Nowadays, it is maybe a bit forgotten, however, it can be a star of your tea time.

Skubaniec z owocami – “Nibbler” with fruits


½ kg all-purpose flour
250 g of cold butter
1 sugar with the real vanilla (I used two tablespoons of sugar and 1 teaspoon of vanilla extract)
2 teaspoons of backing powder
5 egg yolks
5 egg whites (I used 7 for I had some in the fridge that were to be used)
1 cup of icing sugar (I used between 2/3 and ¾ of the cup)
Fruits of your choice (the bests are sour fruits, my favourite is blackcurrant, not available in SP however)
Blackcurrant marmalade (optional)


  1. Prepare fruits (wash them, remove the seeds and cut them in pieces if necessary)
  2. Sieve the flour
  3. Chop the cold butter and flour with the knife
  4. Add vanilla sugar (or sugar with vanilla extract), backing powder and egg yolks
  5. Knead the dough quickly, cool down in a refrigerator
  6. Prepare the backing tray (smear the butter and sprinkle with the bread crumbs or just use the parchment paper)
  7. Whisk egg whites with sugar
  8. Nibble 2/3 of the dough into the backing tray, spread it evenly with hands
  9. Smear a few tablespoons of the marmalade on the dough
  10. Arrange the fruits (you can use very dense marmalade or jam, too)
  11. Spread evenly whisked egg whites
  12. Nibble the rest of the dough
  13. Bake in 200°C/390 F for 40-45 minutes.
